Step 3: Eating on a Budget

College is stressful and what makes things even more stressful is trying to maintain a well-balanced diet while living on your own and NOT breaking the bank.


So, I'm sure you've already guessed it based on the title, but this week I will be sharing with you some cheap and easy meal ideas that anyone can make while in college.

For the Dorm

  1. Mac N Cheese in a Mug

  • This one is a classic and a go-to for me. I find myself religiously making this recipe, even though I now have a full-sized kitchen at school. All you need are noodles, cheese, milk, a few seasonings, and you are good to go. Check out the video below for more instructions on how to make this quick and easy meal!


2. Microwave Quesadillas

  • While this one may not be as much as a go-to for me now that I can make them on the stovetop, quesadillas in the microwave were a staple for me when I lived in the dorms. For this one all you need is the cheese, tortillas, and whatever else you may have lying around that you could add in, and you've got yourself a meal. Click here for an example of some of things you could add in to spice up your microwaved quesadilla.

For Everyone Else

  1. Stir Fry

  • Another easy one because, once again, you can kind of venture off the recipe with this one and put in whatever vegetables/meats in that you have on hand. My personal favorite is having chicken teriyaki with sauteed zucchini and mushrooms. I love this recipe and have it about once a week! 2. Any Type of Pasta Dish

  • I know I already included mac n cheese in this post, which is technically a pasta dish, but I couldn't leave this one out. My roommate and I are always experimenting with different pasta recipes because, like all the dishes above, you can add in whatever you have on hand and end up with a delicious meal. In addition, pasta is EXTREMELY cheap, so that’s just the icing on the cake.
